Healthy Chocolate Dessert

In honor of Mothers-day I decided to share a delicious and at the same time healthy chocolate dessert. I have been doing a 10 day cleanse and thus couldn’t really eat anything unhealthy. Like most people, I was craving something sweet. I decided to make myself chocolate mousse, but with healthy ingredients, and can I just say, it was delicious!! Yes, it does kinda look strange, but if I never ate anything that looked odd, I would probably never eat anything! So here it goes:

Ingredients:

  • One avocado
  • a few grapes
  • half- whole banana ( depending how large the banana is and how sweet you want it)
  • 3 teaspoons raw cocoa powder
  • 5 medjool dates
  • If you want, raw honey( I didn’t use honey– but that helps sweeten it, if you want it sweeter)
  • blender

How to:

  • Put all the ingredients in a blender and blend until smooth.
  • Serve in dish and ENJOY…

HAPPY EASTER & Traditions…

Easter is fast approaching, well–really in two days, YIKES! But I thought I would share one of my family’s traditions with you (which you can use next year). To be honest, I’m not sure which culture uses this tradition, but we did this on both my parents’ sides of the family’s. When we were younger, we would decorate Easter eggs, fill them with candy, share some with friends and family and then the “Easter bunny” would hide them so that we could go and search for these.

Here is how the process works:

In the weeks leading to Easter, when you eat eggs, make sure to get a small hole on the one side, and then shake the egg out of it. This way the eggshell stays somewhat whole. After this, rinse the egg and let it dry. Collect as many eggs as you wish to use. If you eat a ton of eggs, then you will have them in no time.

After they have dried, you can start decorating them. There are so many ways to decorate them—paint them, use stickers, dye them, use sharpies, etc. I love just using acrylic paint and giving them a good layer or two of paint. Once they dry again, I like to paint patterns or write words on the eggs. Sometimes even get some fancy stickers and stick them on. Mainly this step is just fun and makes them look nice.

Next up is the fun part. You fill them with candy. I generally like to buy a few different types of candy, some chocolate (just make sure they don’t melt), gummy candy, peanuts and raisins, and whatever else there is. But also make sure they are not humongous, because they need to fit into the egg. I like to put the eggshells back into the egg-carton with the hole facing up. Then I just fill the candy into them, until they are almost full. Lastly, you place some cotton in them and can tape some tape over the hole, to keep everything in, until they are done being hidden and found.

The decorating part is so much fun to do with kids (old enough to not break the eggs) and it is also really enjoyable, on Easter to find them in the yard and later enjoy the candy! I would love to see some of your decorated eggs!! This was one of my favorite traditions. We would decorate a lot of eggs, and then give some to friends, but also we would receive some from our friends, and it was always so much fun to see what they filled into the eggs!

Vegan Sweet Potatoes with Garlic Sauce

I’m currently experimenting with easy to make dinners, that of course are Vegan. When I found this recipe, it was not only easy to make it, but also fast and super delicious! And to top it off, it looks super pretty and fancy! Who doesn’t want that?

Ingredients:

  •  4 medium sweet potatoes
  • 15 oz can chickpeas, rinsed and drained
  • 1/2 Tbsp olive oil
  • 1/2 tsp each of cumin, cinnamon,paprika
  • Optional: pinch of sea salt and or lemon juice

GARLIC HERB SAUCE:

  •  1/4 cup hummus ( I used tahini)
  • juice of 1/2 lemon
  • 3 cloves garlic, minced
  • water or unsweetened almond milk
  • Optional: sea salt to taste
  • I added in some dried basil

TOPPINGS ( OPTIONAL):

  • 1/4 cup cherry tomatoes, diced
  • 1/4 cup chopped parsley ( I used dried parsley)
  • 2 Tbsp lemon juice

How to Make:

  1.  Preheat Oven to 400 F  ( 205 Celcius) degrees and line a baking sheet with foil.
  2. Rinse and cut sweet potatoes and rub with oil, place on baking sheet.
  3. Toss rinsed and drained chickpeas with olive oil and spices on a baking sheet.
  4. While Sweet potatoes and chickpeas are baking ( approximately 25 minutes), prepare the sauce and toppings.
  5. To make the Garlic Sauce, in a container mix Hummus( or Tahini) , lemon juice, crushed garlic, water/almond milk, and sea salt and MIX! I also added some dried basil.. Add as much or as little water/almond milk as you need to have the consistency that you want your sauce to be.
  6. For the toppings( if you choose to make this), add the cherry tomatoes, parsley and lemon juice in a container and let marinate.
  7. When the sweet potatoes are fork-tender, dish them on a plate flesh side up. Add the chickpeas, and top off with the sauce and toppings!
  8. Enjoy and serve again!

Fitness– What to do?

My Second blog for 2015 (and it’s already half way through February—OOPS)! And my first blog about Fitness! I’ll admit, it was a little rough knowing where to start, but realized I just needed to start somewhere.. I will be doing a fitness series of blog posts, so come back to find out what is next!

 

I believe one of the most important things about sticking with Fitness, is finding the right program for yourself. Whether you decide to run, walk, do yoga, lift weights or do a workout DVD, it has to be something that you can enjoy, OTHERWISE it most certainly will not last. With this being said, some people also enjoy working out with other people, if that is you, find a group of like-minded individuals and enjoy your workout journey!

 

I personally enjoy running and low impact workouts, such as PiYo. PiYo is a good cross-training workout! Which means, if you already enjoy swimming/cycling/running or really anything else, PiYo can be a great add-on. But PiYo by itself is pretty awesome too! Just going out there and doing something is great for your health! Don’t think too much about it– just do it ( as Nike likes to say).

VEGAN RED CHOCOLATE CUPCAKES/CAKE

With Valentines day creeping up, I thought it’s a great time to update my blog. I figured these red colored– yes actually healthy coloring and not some fake dye– cupcakes or cake would be fun and super delicious to make. Unfortunately they are not gluten free– but I’m sure you smart folks can convert it to Gluten free cupcakes.

Ingredients:

  • 1/4 cup pureed beet (this is what gives it a slight red coloring)
  • 1/4 cup unsweetened almond milk ( I’m sure you can use other milk or substitutes) + 1/2 tsp lemon juice
  • 2.5 Tbsp cane sugar ( I used brown sugar)
  • 1 Tbsp melted coconut oil or earth balance
  • 1/4 tsp vanilla extract
  • 1/4 tsp baking powder
  • pinch sea salt
  • 2 Tbsp unsweetened cocoa powder
  • 1/4 cup + 1/2 Tbsp all purpose flour
  • 2 Tbsp semi-sweet chocolate chips– melted
  • For topping/middle : 2 squares quality vegan dark chocolate

How to:

  1. Butter a muffin pan or cake pan
  2. Preheat oven to 375 Fahrenheit ( 190 Celcius)
  3. Add almond milk and lemon juice to a small mixing bowl, let set for a minute
  4. Add the sugar, oil, vanilla, and beet puree of the beet. Mix very well.
  5. Add cocoa powder, flour, baking powder and salt. Mix well.
  6. Lastly add melted chocolate and mix more.
  7. Divide batter evenly up to the almost top of pan. Put some of the squares of chocolate down the center of batter.
  8. Bake 15-20 minutes until done!
  9. Let rest in pan for 4 minutes and then you can take them out—- should come loose from pan fairly easily.
  10. Can be served with whipped cream (Of course a Vegan version)!

Chai Hot Chocolate

Winter is slowly creeping upon us.. ok I guess really slowly.. but since I enjoy hot beverages, I decided to try a Chai Hot Chocolate recipe and it was amazing so i decided to share!! And starting next month, I am thinking of blogging more of a fitness page.. ( I’d like to know if that is of interest to anyone?)

Ingredients:

  • 2 cups almond milk ( of course you can try any type of milk that you like)
  • 2 teaspoons agave syrup/ honey
  • 1/2 tbsp cinnamon
  • 1/8 tsp cardamom
  • 1/8 tsp cloves
  • 1/4 tsp allspice
  • 1 tbsp cocoa powder
  • 1/8 cup cocoa nibs

How to:

– Mix together all ingredients in a blender, and heat on the stove! ENJOY.. and leave me a comment letting me know if you liked it as much as I did..

Vegan Zucchini-Chocolate Brownies

I needed to make Brownies, and I realized that I only had one egg ( since I don’t really eat eggs) and most recipes require more than one. I decided to look for a Vegan recipe.I was so excited when I found this recipe on Pintrest, since I have a lot of Zucchini in my yard ( Sometimes it gets to the point, where we don’t know where to go with ’em). And this recipe is so freaking delicious too! I’d love to hear about more different Brownie Recipes!!

Ingredients:

  • 1 1/2 cups sugar
  • 1/2 cup veggie oil
  • 1 cup unbleached flour
  • 1 cup whole wheat flour
  • 1/4 cup unsweetened cocoa powder
  • 2 cups shredded zucchini
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 3/4 cup semi sweet chocolate chips

Instructions:

Preheat Oven to 350F.  Spray an 8×8 pan with cooking spray/oil.

  1. In a mixing bowl, combine sugar, oil and flour. Turn mixer on low, and add cocoa, zucchini, vanilla,salt and baking powder.Once well combined, add with a spatula/spoon chocolate chips.
  2. Pour batter in the pan and bake for about 45 minutes.
  3. Remove from oven, let cool and cut into squares!
  4. ENJOY!!!

Pineapple Sorbet/ Smoothie

If you like Jamba Juice as much as I do, but despise the Price-Tag, then you will love this recipe! I know, there are a lot of different fruit you can add, to make different smoothies, but this recipe is one of my favorites for the summer! Also, depending on whether you want a smoothie or sorbet, you can use frozen fruit to make it more ice-cream like; or adjust the liquids if you want it cold, but also want it to be a smoothie.

Ingredients: ( For 2 sorbets):

  • 1/2 cup frozen Pineapple
  • 1/2 cup frozen Mango
  • 3/4 cup Coconut Milk
  • 1/4 cup Apple Juice

 

– Mix all of these Ingredients in a blender( I like to use the Vitamix, since this blender can blend anything and everything, even ICE), Serve and ENJOY! As mentioned above, Sorbets and Smoothies can be made with a lot of different ingredients, but this recipe is amazing! It’s especially great to cool down on a hot summer day!
